- 4 cups vegetable broth
- 2 stalks of lemongrass, bent and cut into large pieces
- 6 kaffir lime leaves
- 3 slices galanga root
- 1 red chili, chopped
- 300g tofu, cut into cubes
- 200g mushrooms, diced
- Juice from 2 limes
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- Fresh cilantro for garnish
Step 1: First, prepare your ingredients. Clean the vegetables and cut them into the indicated pieces. Set aside.
Step 2: Heat the vegetable broth in a large pot. Add the lemongrass, kaffir lime leaves, galanga root and chopped chili. Let the broth simmer for 10-15 minutes.
