Today you will be taken on a culinary journey to Asia. Our destination today: Thailand 🇹🇭. But don't worry, you don't really have to stray from your kitchen. We're bringing a traditional Thai dessert to your home. We're talking about the popular Mango Sticky Rice, but in a vegan variation 🥭🍚! It's a flavor explosion with just a few ingredients. Let's get right to it!
Mango Sticky Rice, also known as Khao Niaow Ma Muang, is one of the most famous desserts from Thailand. It basically consists of only three main ingredients: Glutinous Rice (also known as Sticky Rice), Mango and Coconut Milk. The sweet mango and rich coconut milk contrast nicely with the soft, sticky rice. In our version we make it vegan of course 🌿!
A moving picture is worth a thousand words. That's why I've included a YouTube video here where you can see every step exactly. It is presented by a real Thai cook. If that does not promise authenticity! 😁
Mango Sticky Rice Recipe
For our vegan Mango Sticky Rice recipe, here's what you'll need:
- 1 cup glutinous rice (Glutinous Rice)
- 1 1/2 cups coconut milk 🥥
- 1/2 cup sugar
- 1/2 teaspoon salt
- 2 ripe mangoes 🥭
- A few mint leaves for decoration (optional)
Start by soaking the sticky rice in cold water for at least 4 hours or overnight. This is a crucial step so that the rice will have the right "sticky" feel later. Once the rice has soaked, rinse it several times until the water runs clear.
While the rice is cooking, you can put the coconut milk, sugar and salt in a small pot. Stir everything well and let it simmer over medium heat. Once the sugar is completely dissolved, you can remove the pot from the heat. Taste the syrup and add more sugar or salt as desired.
After the rice is cooked and the syrup is prepared, pour half of the syrup over the hot rice and mix everything well. The rice will soak up the sweet coconut syrup, making it deliciously sticky. Let the rice sit for about 15 minutes so it can completely soak up the syrup. In the meantime, you can peel the mango and slice it thinly. At the end, put the rice in a bowl, place the mango slices on top and pour the remaining syrup over it. The delicious vegan Mango Sticky Rice Dessert is ready 🎉!
So simple and yet so delicious. With this vegan Mango Sticky Rice recipe, you're guaranteed to bring a touch of Asia into your kitchen. Whether as a dessert or as a snack for in between - this recipe will definitely make every sweet tooth happy 😺!
