Step 2: In a bowl, mix the flour, sugar, vanilla sugar, salt and baking powder. In a second bowl, melt the vegan butter and mix it with the soy milk, apple cider vinegar and lemon zest.
Step 3: Now add the wet ingredients to the dry ingredients and mix everything well until a smooth dough is formed. Let it swell for about 10 minutes.
Step 4: Pour the batter into the prepared baking pan and bake the madeleines for about 12-15 minutes until golden brown. Let them cool briefly before dusting them with a little powdered sugar.
Another great aspect of this recipe is that it is very variable ๐. For example, you can turn the madeleine into chocolate madeleine by adding cocoa powder, or make delicious nut madeleines by adding chopped nuts. So there are no limits to the ideas!
The vegan madeleines keep fresh in an airtight box for a few days and are therefore also the perfect gift for the next birthday party or the next coffee party ๐.
