Before we can start the preparation, we should first prepare all the ingredients. Here is everything you need for about 20 vegan jiaozi: π§
First, we take care of the dough. To do this, we mix the flour and water in a bowl and knead it into a smooth dough. This should not stick, but also not be too dry. If the dough is too wet, just add a little more flour. If it is too dry, a little more water will help. Then let the dough rest for about 30 minutes π .
While the dough rests, we can devote ourselves to the filling. For this, cut the vegetables into small pieces and fry in a pan together with the chopped seitan or tofu. Finely chop the garlic and spring onions and add them. Season with soy sauce, ginger, salt and pepper. Now the filling can cool until the dough is ready. π£
Now it's time to get down to business - or rather: shaping the dumplings! Divide the dough into 20 equal pieces and roll them out into small circles. Put some of the filling in the center of each circle and fold the dough over it. Press the edges firmly together so that the jiaozi are well sealed.
