Bouillabaisse is a traditional fish soup from Marseille, usually prepared with absolutely no vegan ingredients. Its unique delicious flavor comes mainly from different seafood and fish varieties. 🐟 Our challenge today is to imitate all these flavors without using animal products. A daring endeavor, but one that will give us a very creative and delicious vegetable soup!
Let's start with the ingredients for our vegan bouillabaisse: We need both staples that can be found in every household and some special ingredients that are essential for the unique maritime taste. 🥬
Now we come to the most exciting part: The preparation of our vegan bouillabaisse! Put on your cooking apron, let's get started! 👩🍳👨🍳
First we need to prepare the vegetables. Finely chop the fennel bulbs, onions and garlic cloves. Cut the tomatoes and potatoes into medium sized pieces. Sauté the fennel, onions and garlic in olive oil until soft.
Next we add our aromatic spices: saffron and paprika. This gives our dish its distinctive golden color and a savory touch. 🌶️
Now we add the sliced tomatoes and potatoes and let it simmer for about 10 minutes. This gives our bouillabaisse a nice texture and ensures that the flavors blend well together.
Now it's time to add our vegetable broth. Also add the bay leaf and thyme sprigs and simmer for about 20 minutes. 🍲 This will intensify our soup flavor.
Our secret ingredient is the seaweed. They are added to complement the bouillabaisse with the maritime flavor that would otherwise be achieved by the seafood.🌱
