Mash the tofu with a fork and set aside. Peel and finely chop the onion and garlic. Wash the zucchini and carrots and cut them into small pieces. Now sauté the vegetables in a pan. After a few minutes, add the tofu and the strained tomatoes and stir everything well. Season with salt, pepper, basil and oregano.
For the vegan béchamel sauce, just follow the instructions on the package. Make sure the sauce is nice and creamy - it's a key ingredient in our lasagna and helps to bring all the flavors together.
