Cannoli are a true classic of Italian cuisine and originate from Sicily. ๐ฎ๐น They are traditionally made of thin dough that is formed into rolls and then deep-fried. They are filled with a sweet cream of ricotta cheese and sugar, often with chocolate chips or chopped pistachios. With our recipe we bring some fresh air to the time-honored tradition and make them completely vegan cannoli. ๐ฑ
In this vegan cannoli recipe we replace the ricotta with soy curd and the eggs with soy milk and apple cider vinegar. Instead of sugar, we use maple syrup and the traditional chocolate chips we swap for a healthier option: raw cacao nibs. ๐ซ Alternatively, you can also customize the filling with raspberries or orange peel.

Step 1: Mix the flour with the cocoa powder, cane sugar, flaxseed meal and salt in a bowl. Do not forget that the dough must be well kneaded to be really delicious. ๐ด
Step 2: Then add water, vegetable oil and the white wine and knead everything well until you get a smooth dough. After kneading, the dough should rest for at least an hour. ๐ค
Step 3: Then roll out the dough on a floured work surface about 2mm thin and cut out circles. Place these circles around the cannoli molds and moisten the ends with a little water and press firmly. ๐ช
Step 4: Now fry the cannoli in hot oil until golden brown and then drain on paper towels. Make sure that the cannoli do not stick together during frying. Set another machine in motion. โ๏ธ
Step 5: For the filling, mix the vegan quark with maple syrup and vanilla extract until smooth. Fold in the cocoa nibs and fill the mixture into a piping bag. Now fill the cannoli with it.
