- 2 stalks green onions
- 3 tablespoons paprika
- 2 tablespoons tomato paste
For glass noodles:
- 500 g rice noodles 🍜
- 1 bunch mint
- 1 bunch coriander
- 1 bunch of Vietnamese basil 🌿
The preparation of vegan Bún Riêu consists of the following steps:
Step 1: Soak the rice noodles in water until they are soft.
Step 2: Heat the vegetable broth in a pot and add the lemongrass and tomatoes.
Step 3: In a separate pan, fry the tofu until crispy and add to the vegetable broth.
Step 4: Whisk together the fermented soybeans, silken tofu, scallions, paprika and tomato paste and set aside the tofu "egg".
Step 5: Add the tofu "egg" to the broth and bring to a boil. Then reduce the heat and simmer for 10-15 minutes.
Step 6: Finally, divide the rice noodles into bowls, pour the Bún Riêu broth over them and garnish with fresh herbs.
