Vegan albóndigas in tomato sauce
Let's start with a Spanish classic that can not miss directly in vegan diet -. vegan albóndigas in tomato sauce. 👍
Ingredient list:
200g red lentils
1 onion
2 garlic cloves
80g breadcrumbs
Salt and pepper
Homemade tomato sauce
Step-by-step instructions:
Cook the lentils in boiling water for about 20 minutes until soft.
Finely chop the onion and garlic and fry in a pan.
Put the cooked lentils, onion, garlic and breadcrumbs in a bowl and mix well.
Season the mixture with salt and pepper and form into small balls.
Fry the balls in a pan with a little oil and serve in the tomato sauce.
Roasted chickpeas
Roasted chickpeas are a simple but delicious snack. Perfect for a social evening with friends! 😁
Ingredient list:
1 can chickpeas
2 tablespoons olive oil
1 tsp paprika powder
1 tsp cumin
Salt and pepper
Step-by-step instructions:
Preheat your oven to 200 degrees.
Drain the chickpeas and mix with olive oil, paprika powder, cumin, salt and bell pepper.
Spread on a baking sheet and bake for about 20 minutes until crisp.
Vegan Tortilla Española
The Spanish tortilla is an absolute must at tapas night and we show you how to make it vegan too 🙂 .
Ingredient list:
500g potatoes
1 yellow onion
300ml chickpea water (aquafaba)
2 tablespoons olive oil
Salt and pepper
Step-by-step instructions:
Cut the potatoes and onions into thin slices and sauté in olive oil.
Place the chickpea water in a bowl and whisk until fluffy.
Put the potato and onion mixture in a pan, pour the whipped chickpea water over it and mix everything well.
Fry over medium heat until the underside is golden brown, then flip and finish on the other side.
Vegan aioli
What would a tapas evening be without aioli? This simple but delicious cream gives every dish that certain something. 👌
Ingredient list:
200ml soy milk
2 garlic cloves
200ml sunflower oil
Juice from half a lemon
Salt
Step-by-step instructions:
Put the soy milk, garlic, sunflower oil, lemon juice and salt in a blender and blend well.
Place the aioli in the refrigerator for about an hour to set.
Vegan Patatas Bravas
Finally, another tapas classic: Patatas Bravas. These crispy potato bites are simply irresistible! 😍

500g potatoes
2 tablespoons olive oil
1 tsp paprika powder

Vegan aioli and brava sauce to serve
